So, if you’ve hung around Done with Diligence for a while, you know my theme…PRACTICAL! Life is busy around here with homeschooling, chores, extracurricular activities, and kids that seem like bottomless pits! While I have so much respect for these bakers crafting these artisan loaves of bread that took a whole 24-hour period to craft, that’s just not how we’re rollin’ over here!
You see, I’m in this for the long haul… I want to consistently feed my family real, nourishing food. That means I’ve got to find recipes that are not only nutrient-dense, but that will actually happen over and over again. So when I try a recipe that’s super time-consuming or requires a lot of attention or precision, it just doesn’t make the cut.
But this recipe checks all of the boxes. It’s easy, fast, healthy, and delicious! So let’s make it happen, shall we?
1. Combine all ingredients into large mixing bowl.
2. Mix on low speed then move up to medium speed. It will look more like brownie batter than bread dough.
3. Butter sides of loaf pan.
4. Pour batter into loaf pan.
5. Cover with a damp tea towel. Place in warm spot (I put it on my counter with the under-cabinet lighting shining on it). Let dough rest for about 30 minutes at room temperature.
6. Preheat oven to 350 degrees.
7. Remove damp towel and bake for 40-45 minutes.
In my opinion, the best way to enjoy this delicious bread is with a little peanut butter on the top of your fresh slice. YUM! If you’re a Reeses Peanut Butter Cup fan, you’ll appreciate the flavor combination. You could also add a little butter to the top. Healthy, rich chocolate flavor for breakfast? Yes, please! For best results, warm the bread just a little before serving.
