Here's what you need:
Since these cookies are crumbly and aren't known for their smooth texture, you might be able to use either almond meal or almond flour. The difference between the two is that almond meal has bits of the almond skins mixed into them.
I like to use almond flour whenever I bake because it resembles flour so closely.
Use unsalted butter and let it soften at room temperature before you mix it into the dough.
If you use salted butter, don't add more salt to the mixture.
You will use this twice in the recipe! First, use it to sweeten the cookie dough. Then, save some in a bowl.

Vanilla extract flavors the cookies with a light vanilla taste. If you want the cookies to have a stronger almond flavor, add a few drops of almond extract too.
Some recipes use walnuts instead of pecans. Pecans have 1g net carbs in each ounce, and walnuts only have 2g net carbs per ounce. It's perfectly fine to replace the pecans with walnuts if you want.

The first step is to use an electric or stand mixer to mix the butter with the powdered sugar substitute.
This is why it is so important to let the butter soften first. It's so much easier to mix when it is soft!
Next, add the almond flour, vanilla extract, and salt. Only add the salt if you use unsalted butter.
Keep mixing the cookie dough together until everything is completely mixed.
Scrape the bottom and sides of the bowl to incorporate the butter mixture into the flour.
Next, gently fold in the chopped pecans. To fold something in means you add it but don't over mix it. Gently incorporate the pecans into the rest of the cookie dough.
Then, make dough balls, all equally sized, and place them on a baking sheet lined with parchment paper.
Freeze the balls of cookie dough for about half an hour.
While they are chilling in the freezer, preheat the oven.
Place the frozen cookies and cold baking sheet into the preheated oven and bake the cookies for about 12 minutes.
After they are fully baked, let them cool off completely. Then, roll the cookies in the powdered sugar substitute.
Now they look like snowballs!
